Methods of application:
I. Spraying
1. Preparation of the product. For effective results, the surface of the product must be dry and warm. To do this, dry the product for 30 minutes at a temperature of 25°C.
2. Application of the drug. The application of a smoking product is a cyclical process that includes the following steps:
- Spraying;
- Waiting time;
- Ventilation.
It takes 3 minutes to spray the product. Then the product remains in the smoking chamber for another 5 minutes. After that, the product is ventilated for 30 minutes at a temperature of 25-30°C. This procedure should be repeated three times.
3. Cooling of the product. The product is cooled at 18-21°C for about an hour. Then the product should be cooled to the specified parameters. After cooling, the product can be used for maturation and packaging.
Important! The smoking flavor is not diluted with any liquids.
II. Additions to the marinade
The prepared raw materials are placed in the prepared marinade with the addition of ATOMIZER at a dose of 0.1-1%, which is kept in accordance with the technological process.
If the technology involves further cooking in a thermal chamber or smoking in a chamber, it is recommended to reduce the processing time (by 15-20%).
Important! Heat treatment of pickled foods enhances the color and flavor.
The use of ATOMIZER flavoring does not have a strict dosage, because the rate of adding smoking liquid depends on the composition and recipe, on the desired result, on the degree of flavor saturation and taste preferences.
Smoky flavoring. The atomizer is supplied in 1/5/10/20 liter PET canisters.
The shelf life of smoke in a tightly closed container is 24 months.
